Ingredients:
Directions:
Separate the eggs into two good sized bowls and beat the egg whites until stiff. Mix the egg yolks and sugar until thick. Slowly bring milk to boil over medium heat, stirring occasionally. Pour hot milk into yolk/sugar mixture, slowly, only a little at time, and mix well. Pour milk/yolk/sugar mixture back into pot and heat on medium until thicker to make a custard. Do not boil. Pour custard in with beaten egg whites and mix well. Add sea salt (keeping adding salt until it tastes salty sweet). Put mixture in fridge to cool. Once cool, add cream, vanilla and coloring to mixture. Freeze, following your ice cream maker’s instructions. If you wish, get some ice pop molds. Spray the inside of these with very little PAM spray (or something similar). Then pour the ice cream into the molds right after it comes out of the ice cream maker. Pop the lid on and the stick in and freeze for at least two hours.

I've never made ice cream before, so I did you guys a favor and found this recipe elsewhere. This ice cream mixes the salty taste of sea salt with the sweet tastes of cream and sugar. Apparently, Kingdom Hearts II director Tetsuya Nomura had this ice cream on a trip to the Tokyo Disneyland Resort and liked it so much he decided to work with Disney to put it in the games. The characters of Kingdom Hearts II can often be seen eating and talking about this delicious salty-sweet dessert. Enjoy it with your best buddy at twilight.

I did every single step up until the ice cream machine part (since I've seen someone make it without the ice cream machine, just making the final mixture and pouring it into popsicle molds). After I froze it, I tried getting it out of the molds but it won't come out. The sticks keep coming out but the ice cream stays inside. Help!
ReplyDeleteplace the mold in warm water for a very short period of time (10-20 seconds) this melts the outside, but keeps the inside frozen

ReplyDeleteThe only thing I can suggest, and this might depend on the kind of molds you have, but have you tried running warm water over the outside of the molds? That might melt the outside of the popsicles enough to dislodge them. Hope this helps!
this is just to specify- but when you say freeze following ice cream makers instuctions, do you mean use an ice cream maker? (truthfully i feel kind of foolish asking, but i just want to make sure)

DeleteWhat's the best food coloring combo to get the color in the picture?
ReplyDeleteYou should probably just add each drop of blue food coloring one at a time, and stir the entire thing so that the color spreads evenly before adding the next drop. This will allow you to chose whichever shade of blue you find fitting.
Delete7 drops blue, one drop green. can add extra drop of blue depending on the exact tone of your food coloring. you want the arctic/ice blue color. therefore you have to add more blue than you do green, as it is a bluer shade of turqoise.

DeleteI made this stuff once and it was delicious, but I put too much salt in it...so be careful with the salt! Words of wisdom from my mother, she's always telling me: "You can always have more, but you can't put it back!" It's true with the sea salt.

For those of you wondering how to make ice-cream without an ice-cream maker -
ReplyDeleteYou'll need:
- 1 large tin with a lid*
- 1 small tin with a lid* (large enough to hold the ice-cream mixture, but small enough to fit inside the large tin with plenty of room all around)
- Crushed ice
- Rock salt (you can use leftover sea salt if you prefer, but it's a bit of a waste as you won't be eating it)
- Duct tape (or something else to make sure the lids stay on the tins)
*Clean coffee tins work really well, but they can be hard to find now that most coffee makers have started using plastic containers.
First, pour the finished ice-cream mixture into the smaller tin and secure the lid on TIGHTLY. Use a bit of duct tape or something else to be sure it'll stay on.
Pour a layer of crushed ice into the larger tin and sprinkle the ice generously with rock salt.
Place the smaller tin in the center of the larger tin, on top of the ice.
Fill the space surrounding the smaller tin with layers of crushed ice and sprinkled rock salt. When you're finished, the smaller tin should be completely surrounded and covered by ice.
TIGHTLY secure the lid on the larger tin, fastening it with duct tape (or something else) to be sure.
Now's the "fun" part - set the large tin on it's side on the floor and roll it back and forth for 30 minutes to an hour, checking occasionally to drain off melted water and add more ice and rock salt. This is most easily accomplished by two people sitting on the floor and rolling the tin back and forth to one another (like playing catch but without the throwing).
When you're done you'll have a finished product that's virtually identical to one made in an actual ice-cream maker. :)

I wasn't particularly salty but still had that tinge, which brought out the flavors of the ice cream itself. Anyway, I hope to enjoy some of you're other recipes =D

You might want to add the direction to temper the egg yolks before adding the hot milk. Add a little of the milk first to get the eggs to assimilate the temperature so that they don't scramble. ^^

Minor adjustment. 1/4 cup sugar will suffice, trust me.. 1/3 only if you have a strong sweet tooth.
ReplyDeleteThere's a couple other recipes asking for 1 whole cup of sugar, big no-no! You'll kill yourself doing that.
ps- Do not use egg whites in ice cream recipes, especially stiffened egg whites. You will end up with curds as the whites do not temper the same way as yolks!!

ReplyDeleteTheir is no real definite time so the best way to check is by dipping a spoon into the mixture and seeing if it coats the back. I use a thermometer and try to keep it from going over 170 F
